Pussy Pie

This evening it was my turn to cook the dinner. Jess and I decided that it was going to be Pussy Pie.
Ingredients as follows:

Cheese or Squirty processed cheese.
One tin of beef and onion pie filling. (Serves 4)
Some nice ripe juicy tomatos.
Lard, roughly 100-200g depending on how fatty you like the pastry.
Plain flour for pastry
A pinch of salt

I blended the lard, (Pig fat) with the flour and the salt to make a nice big fat lump of pastry dough. This I divided into two lumps, one for the base of the pie and one for the lid.
I also added a bit of water and oil to make the pastry easier to roll.

I rolled one lump flat and used it to line a pastry dish. This I baked for 15min in the oven until crisp. Some say it's a good idea to prick the base to stop it rising. I do this but it rarely has any effect, who gives a toss anyway? This is real home cooking.

Next I filled the pie with the beef and onion mix, topping it off with chopped tomatos and cheese.

Finally I roll the pie top pastry and lay it on top, crimping the dough into the edges in an attempt at a seal. When this is done I trim the outer edges of the dough and use this to make a pastry cat shape to sit on the top of the pie.

Glaze with milk which helps smooth the cracks, add a bit of egg for a shine.

Cook until golden and brown.

No pussy was harmed in the making of this pie, I'd have made the dough into the shape of a cow but I'm not that artistic.

Jeff.... hmmm pie. I make a good egg custard tart too.
