Wednesday night dinner - Chicken w. Molasses sauce, Gnocchi, Apple Pie & Rum


I made homemade gnocchi, 2 cooked potatoes, 1 cup flour, egg, nutmeg, garlic powder, oregano, salt, black pepper. Mixed the prior and then separated and rolled into ropes and rolled in corn meal, cutting 1" pieces, put in salted boiling water, when they float to the top, they are done. I then put them in a pan of olive oil, butter, and garlic and saute for a few minutes.

I made chicken, seasoned anyway you want, flipped the chicken over and poured in some crushed tomatoes, oaky red wine, and a touch of molasses. I made a lot because I used this as a sauce for the gnocchi though I didn't use much.

I made an apple pie, homemade pie crust, flour, Crisco, cold water, baking powder, baking soda, salt and mixed in with the apples, brown sugar, white sugar, 3 Tb instant tapioca to absorb the juices, and dark rum. It wasn't bad. What was disappointing, I bought the last apples of the season and unfortunately they are not not Stayman Winesaps, the only apples you should use. If you want great tasting food, you need to use great tasting ingredients, top quality, no compromise. Stayman Winesaps are<b> tart </font></b>and they withstand the heat of an oven, absolutely the best. Unfortunately, you can only get them at farm stands and it's an old time apple that is losing popularity and becoming difficult to find. Most farmers are not planting replacement Stayman Winesap trees.
